Broadening Salad Horizons


            Pounds and pounds of watermelons were carried into St. Andrews Church this week for the Community Harvest Dinner. Four of the large fruits, in addition to a fresh canary melon, were chopped up and served with dinner. I somewhat pathetically had to use all of my body strength to cut through the watermelon rind, but they were so delicious it was worth it. 





            In addition to watermelon, Community Harvest served hot meatball hoagies with marinara sauce and parmesan cheese, and a side of pretzels. The sandwiches were definitely a crowd pleaser. The Community Garden provided us with a variety of fresh vegetables, shown below, that were used to make a colorful salad. 



            Ben, pictured below, brought raspberries that were added to a homemade raspberry vinaigrette dressing. Most of our guests prefer traditional ranch or Caesar dressing, so we were so excited when we received compliments on the dressing! Most people came back for a second serving and two people even asked for the recipe!



            When it came time to serve the meal, we had help from the lovely gentlemen of Delta Upsilon Fraternity… 




....as well as first year students involved in the Social Justice Residential College! With 75 people to serve, we would not have been successful without our excellent volunteers!
