Pesto Presto

This week at Community Harvest, meal preparation was extraordinarily quick thanks to the helping hands of our volunteers! Dinner included a delicious pesto chicken dish, salad fresh from the Community Garden, olive oil pasta, and fresh bread. We started by chopping kale, spinach, and other greens that were freshly picked earlier that day.

Theresa and Tim tossed the salad with craisins and a honey-mustard Dijon salad dressing that Ben mixed together from scratch.

Our dedicated weekly volunteers Sarah, Emerson, and Brianna chopped up the chicken that was baked by volunteers earlier in the week.

Ben mixed in the tomatoes (also from the Community Garden!) and freshly ground pesto sauce with the chicken. The end result, pictured below, smelled so fantastic that the volunteers would have eaten the whole thing if we could!

The sisters of Kappa Alpha Theta arrived to help serve dinner and brought a smile to everyone’s face. They were so kind and conversational with all of the guests. And with their help, the clean up process was done in no time. The Community Harvest would not be around without volunteers like these!
