There
was an influx of potatoes at the Community Harvest this week! So many that we
had to start peeling them a week ahead of time! A group of volunteers from
Kappa Alpha Theta Sorority and Phi Kappa Psi Fraternity met with CH directors
Wednesday in the Bucknell craft center to get a jump on the 75 pounds of
potatoes! A few of the volunteers are pictured below. Lemon juice was added to
the potatoes to keep them fresh and tasty until Monday afternoon.
Our
regular volunteers, Theresa and Brianna, chopped the potatoes into thin slices
to make the main course, a scalloped potato and ham dish. A few more CH
regulars cooked and chopped the ham and made the tasty cheese sauce that
covered the potatoes.
In addition to ham and potatoes, Community Harvest served a vegetable
Medley that consisted of tomatoes, peppers, and green beans! All of the produce
came from the Community Garden, which hosted a “Localvore” dinner the night
before. Members of Alpha Chi Omega Sorority made the vegetables dish in
addition to helping with setup.
Last but not least, Ben found a creative way to serve a
variety of greens that also hailed from the Garden. He cooked them down into a
spicy mustard green dish that pleasantly surprised the dinner guests!
Finally, dinner was served with the helping hands of
volunteers from the Community Mennonite Fellowship Church! The volunteers also greatly
helped with clean up, with the aid of some of our younger dinner guests! Dinner
served 71 people in total and we expect even more next week!
